Figs with blue cheese
· 100 gm castor sugar
· 115 gm almonds, blanched or unblanched
· 12 ripe figs
· 350 gm blue cheese, Spanish blue cheese works best but any other will do
· Extra virgin olive oil
1. For caramelized almonds, put castor sugar along with a shot of water in a medium sized heavy based saucepan. Always swirl the saucepan and never stir with a spoon when making caramel. This is to be done frequently. Remove from the heat once brown color is obtained and the sugar is on the verge or bubbling. At this stage quickly stir in the almonds and then take them out on a buttered baking sheet to cool down.
2. To serve, slice the figs and put on a plate. Crumble blue cheese on the plate along with some almonds (reserve a few whole ones for garnishing). Drizzle the figs now with some extra virgin olive oil lightly and put the whole almond for garnishing.
